I made this salad last night; it’s a good recipe, but needs a few modifications.
First off, the dressing. When I got done making it, I asked myself rhetorically: “Is this supposed to taste like olive oil?” So if you decide to give this a shot, do what I did: Add two tablespoons of sugar, 7-9 extra cranberries, and a teaspoon of tart cherry concentrate.
The recipe they give for toasting almonds works perfectly. Just remember to pull those almonds off the baking sheet as soon as you take them out of the oven. Also, I used feta instead of blue cheese; I like blue cheese, but not everyone is as much of a fan of it as I.
I only made a half batch, but I find myself wishing I would have made the whole thing just so I’d have more leftovers.
